Homemade Pickling Spice

Makes: 1 cup
  • 4 tablespoons mustard seeds (I used half yellow and half brown)
  • 3 tablespoons allspice berries
  • 2 tablespoons coriander seeds
  • 2 tablespoons red pepper flakes (to taste)
  • 1 tablespoon ground ginger
  • 6 bay leaves, crushed
  • 12 whole cloves
  • 3″ piece cinnamon stick, crushed (I used Ceylon, which is easier to crush)
  1. Combine all ingredients in a jar and shake well to combine. For fermenting, use 1-2 tablespoons per jar of vegetables. Store in the cupboard.
